Ingredients

  • 200g unsalted butter, plus extra for greasing
  • 200g dark chocolate (70% cocoa solids), chopped
  • 200g light brown sugar
  • 4 large eggs
  • 200g self-raising flour
  • 1 tsp vanilla extract
  • 150ml whole milk
  • Pinch of salt

For the chocolate fudge frosting:


  • 200g dark chocolate (70% cocoa solids), chopped
  • 200ml double cream
  • 50g unsalted butter
  • 2 tbsp golden syrup
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 180°C/160°C fan/gas mark 4. Grease and line two 20cm round cake tins with parchment paper.
  2. In a heatproof bowl set over a pan of simmering water, melt the butter and dark chocolate together until smooth and glossy. Remove from heat and set aside to cool slightly.
  3. In a separate large mixing bowl, whisk together the brown sugar and eggs until light and fluffy. Add the melted chocolate mixture and continue whisking until well combined.
  4. Sift the self-raising flour into the bowl and gently fold it into the mixture using a spatula. Be careful not to overmix; you want to maintain a light and airy texture.
  5. Stir in the vanilla extract, milk, and a pinch of salt, ensuring all ingredients are well incorporated.

  9. Remove the saucepan from the heat and add the chopped dark chocolate and vanilla extract. Stir until the chocolate has melted and the frosting is smooth and glossy.
  10. Carefully remove the cakes from their tins and place them on a wire rack to cool completely.
  11. Once the cakes are cool, generously spread a layer of the chocolate fudge frosting on top of one cake layer. Place the second cake layer on top and cover the entire cake with the remaining frosting, ensuring an even and luscious coating.
