  • 1 green chili, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon oil
  • Fresh coriander leaves, chopped (for garnish)

For the Sandwich:

  • 8 slices of whole wheat bread
  • Butter or ghee (clarified butter) for spreading
  • Tomato ketchup or green chutney (optional, for spreading)

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and sauté until they turn golden brown.
  2. Add ginger paste and green chili to the pan. Sauté for a minute until the raw aroma disappears.
  3. Add turmeric powder, red chili powder, and salt to the pan. Mix well to combine the spices with the onion mixture.
  4. Add the boiled and mashed potatoes to the pan. Mix everything together, ensuring the spices are evenly incorporated with the potatoes. Cook for 2-3 minutes, stirring occasionally, until the flavors meld together.
  5. Sprinkle freshly chopped coriander leaves over the potato filling and mix well. Remove the pan from heat and let the filling cool down slightly.
