Ingredients

Cucumbers peeled, seeded and cut into cubes 2 medium
Cherry tomatoes halved10-12
Cabbage leaves shredded4-5
Red cabbage leaves shredded4-5
Boiled corn kernels 1/4 cup
Carrot peeled and cut into thin strips1 medium
Green capsicum cut into thin strips1 small
Californian grapes 6-8
For Cranberry vinaigrette
Dried cranberries 1/2 cup
Sugar 2 teaspoon
Vinegar 1/2 tablespoon
Mustard paste 1/2 teaspoon
Crushed black peppercorns 1/4 teaspoon
Salt to taste
Olive oil 2 tablespoons

Method

Step 1
Combine cucumber, cherry tomatoes, cabbage, red cabbage, corn, carrot, capsicum and grapes in a bowl and chill in a refrigerator.

Step 2
To make cranberry vinaigrette, cook cranberries with sugar and one cup of water in a non-stick pan till they become pulpy. Remove from heat, cool and strain.

Step 3
Add vinegar, mustard paste, crushed peppercorns and salt to the cranberries and whisk well. Add olive oil and whisk well.

Step 4
Drizzle cranberry vinaigrette over the chilled vegetables and toss well.

Step 5
Serve chilled.
