Ingredients

Garlic cloves 12-15
Thin coconut milk 1 cup
Thick coconut milk 1/2 cup
Onions finely chopped3 medium
Green chillies finely chopped2-3
Fenugreek seeds (methi dana) 1/4 teaspoon
Saffron (kesar) a pinch
Red chilli powder 1 teaspoon
Madras curry powder 1 tablespoon
Salt to taste

Method

Step 1
Boil thin and thick coconut milk in a deep non-stick pan, add onions and green chillies and mix well. Add fenugreek seeds, saffron, red chilli powder, curry powder, salt and garlic and cook, stirring continuously, for 10-12 minutes.

Step 2
Pour the curry into a serving bowl and serve hot.
