Italian Tomato Sauce

Ingredients
Tomatoes 4-5 large
Salt to taste
Olive oil 2 tablespoons
Garlic cloves chopped6-8
Onions 2 medium
Black pepper powder to taste
Red chilli flakes 1/2 teaspoon
Sugar 1 tablespoon
Dried oregano 1 teaspoon
Fresh basil leaves 8-9

Method
Step 1
Heat sufficient water in a deep non-stick pan. Add salt and bring it to a boil.

Step 2
Remove the eye of tomatoes, make a cross at the bottom, put in the boiling water and blanch for a minute.

Step 3
Remove the tomatoes from the boiling water and put them in ice cold water. Peel and puree them.

Step 4
Heat olive oil in a non-stick pan. Add garlic and sauté for half a minute. Add onion and sauté till it turns soft.

Step 5
Add pureed tomatoes, mix and add salt. Mix well and simmer for 5-10 minutes. Add salt, pepper powder, chilli flakes, sugar and oregano and mix well. Cook for 2-3 minutes. Shred basil leaves.

Step 6
Switch off heat and add shredded basil leaves. Mix well. Use as required.
